tags: #MacroFriendly #Recipe/Status/we-have-a-winner #Recipe/Bowl #Tex-Mex ## Instructions ### Sweet Potatos - Dice sweet potato into cubes. 200g per serving - Spray with oil - Toss with salt, pepper, garlic powder, paprika, oregano - Air fry at **385 °F for 17 min**, shaking halfway - If just air frying 200g potatoes, 400F for 18 min is too high temp. 18 min is borderline fine, but check the potatoes at 16 min so they don't burn. ### Ground beef - Brown beef (**1 lb**) in pan. Add 1 packet low-sodium taco seasoning. Add garlic powder and salt as needed. - Splash of water as needed - Remove and set aside beef ### Fajitas - Sauté onion & red/yellow bell peppers with oil. Season with fajita seasoning OR salt, pepper, garlic powder, paprika. Cook until soft & caramelized ### Avocado (optional but highly recommended) - Mash up medium Haas avocado. add some lemon juice. ### Assemble Bowl - Sweet potato, then ground beef, then veggies on top. - Sprinkle of cheese. I used Great Value fiesta blend, ~15g per serving. Microwave bowl for 30s - 1 min. - Add **1/4 mashed up avocado** --- ### Attempt 1 on 20260104 Amazing! Made the mistake of adding avocado before adding cheese, so microwaved the whole thing and had warm/hot avocado, but, that wasn't too bad of an error all things considered.
